Ramen Down to the Second

Forget your average ramen joint. Minamo, with Chef Miyazaki (Michelin Bib Gourmand, ramen reviewer extraordinaire) at the helm, isn’t just serving up bowls of noodles; but a masterclass in ramen precision, right here in Malaysia.

With 11 years immersed in Japan’s ramen scene, opening his own legendary spot (Soranoiro), and slurping over 6,000 bowls. Chef Miyazaki brings a piece of his heart to Malaysia, because he believes we deserve to experience the real deal.

At Minamo, Chef Miyazaki uses only chicken broth and, why chicken broth? Because that’s Tokyo’s vibe, and Chef Miyazaki wants us to get it. Why change the menu monthly? Because Japan has seasons, and ramen changes with them. It’s about experiencing the authentic rhythm of Japanese cuisine.

Each bowl at Minamo is a carefully crafted narrative. The 5-hour-and-20-minute broth, simmered with precision. The meticulously chosen noodles, each with its own specific thickness and cooking time.

And the bowls themselves? Arita ware, steeped in 400 years of tradition; they’re a connection to Japanese artistry.

Chef Miyazaki wants us to taste the stories, to understand the culture, to connect with the passion that goes into each bowl. That’s why he encourages us to customize our ramen, to create our own personal ramen journey.

Minamo (“everybody”) is a place where Malaysians can experience the authentic flavours and stories of Tokyo’s ramen scene. It’s an invitation to slurp our way to understanding, to connect with a culture, one delicious bowl at a time.
