The collaboration between Chef Suhalmi and Chef John is a dance of flavours and techniques. From the appetizer of Kaci Fish Tartare, adorned with apple gel and citrus pearls, to the main course of Smoked Wagyu Beef Brisket or Pan Seared Golden Pomfret, the menu is a testament to their shared passion for pushing culinary boundaries.
Dessert is no less spectacular, with an Artisan Stracciatella Parfait that marries mulberry brown butter ice cream with charcoal crumble and vanilla meringue—a sweet finale that echoes the fusion theme of the evening.
